Blueberry Muffins

For the blueberry muffins: 2 cups all purpose flour 1 cup granulated sugar 2 teaspoons baking powder 1/2 teaspoon salt 2 eggs 1/2 cup melted butter 1/4 cup Knaughty Farms Olive Oil 1/2 cup milk 1 teaspoon vanilla extract 2 cups blueberries, frozen or fresh For the streusel topping: 1/4 cup all-purpose flour 2 tablespoons brown sugar 2 tablespoons granulated sugar 1/4 teaspoon ground cinnamon 1/8 teaspoon salt 2 tablespoons butter cold Instructions: Preheat oven to 400 degrees. Prepare a muffin pan with cupcake liners. In a large bowl, mix together 2 cups flour, 1 cup sugar, baking powder, and ½ teaspoon salt. Set aside. In a medium bowl, whisk eggs until smooth. Knaughty Farms® Chimichurri Sauce

We are big on our garden at our Knaughty Farms® ranch and plant a lot of different things.  When I say we,  it is really the green thumbs of the family,  Papa and Adam, and our kids are right out next to them helping plant all the goodies. They love every minute of it and like to help eat their way through picking veggies during the summer.  Chimichurri sauce is an amazing go-to sauce for all seasons. Knaughty Farms Fresh Pesto

Well we did it, Adam and I planted a garden and guess what I haven’t killed anything yet!! Let’s be honest, no green thumb here, wouldn’t keep anything alive if not for my husband and thank goodness for him. I asked him if he would help me plant a garden and he, of course, agreed very reluctantly! I went to the store bought the plants and some pots to put them in since our yard is pretty selective on what gets good afternoon sun.
